BBQ Chicken Pizza





A BBQ style pizza with thin crunchy and in the same time soft crust. You can change topping for any other you like.


Pizza Dough

2/3 cup warm water

1 pkg rapid yeast

1/4 tsp salt

1/4 cup extra virgin olive oil

1 1/2 cup flour + more for kneading


In a bowl mix together warm water and yeast, yeast should be completely dissolved. Add salt and extra virgin olive oil, mix good. Than add flour mix it and knead first in a bowl than transfer dough on lightly floured surface. Continue to knead adding more flour if dough still sticky. Dough ball should be soft and not sticky. Place a ball of dough back in a bowl where you start you mixing it, cover the top with towel or paper towel and let it stand in a warm place about 15-20 minutes to rise. Preheat oven to 500F. Awhile our dough is rising and oven preheating we can prepare sauce and topping.

Sauce

Our next step is sauce for our pizza. Sauce it so individual, because some people like a lot of sauce, some just a little bit. I don't like much sauce on my pizza, therefore if you want to add more sauce, than increase proportions of sauce ingredients.

3-4 Tbs pure tomato paste

1/4 tsp sugar

1 tsp dry basil

about 5-6 Tbs of BBQ sauce, I used Annie's Natural Organic BBQ (original recipe)


Mix together tomato paste, sugar in basil. I usually spread tomato sauce first on the pizza crust and than on the top I spread BBQ sauce, but you can mix both of this sauces together and spread it in one time.

Topping

1 boiled chicken breast or any other cooked meat, sliced

1 medium red onion, sliced as half rings

1 cup or more shredded mozzarella or other cheese you like

about 10-15 black olives without pits



Transfer the dough to a lightly floured surface. You can roll your dough with a rolling pen, but I usually do it by hands. I stretch the dough with my fingertips flipping it once in awhile. Prepare pizza rack, spray it with oil spray and dust with flour or semolina or cornmeal. Place prepared pizza crust on the rack. With spoon spread red sauce on pizza crust, then spread BBQ sauce. Than put a cheese, on the top of cheese put chicken, olives and onion. Bake the pizza about 8-10 minutes until edges of pizza crisp and golden. Enjoy!
